Mike's Gourmet Cucumber and Avocado Soup

Yep, a recipe I created! LOL

 

I've created 1000's of recipes in my past. It's a creative outlet for me. I've never taken one single class or watched one single cooking show. So...I had pulled a lot of cucumbers from my garden (about 20+ from the one plant so far). I wondered what to do with all these cucumbers. I saw a totally different soup recipe using cucumbers and avocados. I thought it would make a good combo. I decided to make some soup. However, being that I don't like soup, I decided to make it meaty (which helps my psyche). Thing is, I didn't want the meat to over power the smooth taste of the vegetables. Sooo...I decided to use Turkey burger and a hint of bacon. I added caramelized onion to balance out the flavors. The end result is a green, yep green fantastic soup! Well at least I believe it to be so. Do keep in mind I don't like a lot of restaurant food and prefer my own cooking. I called this recipe gourmet mainly because of the unique combination of flavors and the unlikelihood that most people would buy 5-6 cucumbers to make a soup. The end result is a very creamy mild soup. The recipe makes at least 4 servings depending on your personal appetite. I ate up all mine and I'm not much one for eating the same thing several nights in a row. The avocados did not turn the soup brown through the several days of eating. Guess I'll be making this at least once a year. Hope you enjoy!

 

 

INGREDIENTS:

 

-5-6 Cucumbers to make about 4-5 cups of small cubes.

- 2 Avocados sliced up to small pieces (make sure they are soft).

- Can of Chicken Broth.

- 2 Tablespoons Heavy Cream.

- 2-3 strips of bacon (I guess you vegetarians could leave out the meat, but you don't know what your missing!)

- ¼ – ½ lb. of Turkey Burger (I used Foodlion brand, it does make a difference).

- 3 Tablespoons Parsley (fresh or dried) I used dried.

- 2 Tablespoons of butter.

- Spices – I use very little amounts of all the spices because I want the natural flavors to prevail. I did use more garlic though. I used garlic powder, and dried garlic pieces (you could use fresh though). About a ¼ – 1/2 teaspoon of both. I used little more than a pinch of Paprika, Beau monde, Pepper, Tumeric, Celery Salt and Salt to taste, but be careful with to much salt!

 

DIRECTIONS:

 

1. Cut up Cucumbers into small cubes.

2. Cut up Onions into bit size to small pieces.

3. Prepare Avocado into small pieces.

4. Pan fry Bacon, ( I did the bacon separate from the rest because I save the grease and it makes the soup less greasy). The extra bacon in picture was for my BLT with homegrown Tomatoes.

5. Pan Fry onion and turkey burger with 2 Tbls. Butter (I cooked extra meat shown in the picture than the recipe calls for). You don't want the meat flavor to take over.

6. Remove all ingredients pan fried . Add cucumbers, spices and Chicken Broth to pan. Cook till cucumbers become tender (about 10 minutes)

7. Let broth cool down a bit and then mix in a blender to puree. BE VERY CAREFUL MIXING HOT BROTH IN THE BLENDER! HOLD THE LID DOWN WITH EXTREME MIGHT! I REPEAT HOLD LID DOWN ABOUT AS HARD AS YOU POSSIBLY CAN!!! If you don't, hot liquid will spray everywhere! After pureeing cucumbers, add Avocado and cream and blend to a very creamy mixture.

8. Manually add and mix meats and onion mixture. Microwave if necessary and enjoy!!!
